Pizza Project has been offering naturally leavened pies made from stone-milled flours since its humble beginnings in the spring of 2021. The Spinales’ initial inspiration, driven by a love for all things pizza, gradually evolved into a mobile pizzeria embodying an adventurous spirit. Constantly experimenting with new techniques using locally sourced, seasonal ingredients, the duo eventually expanded their menu to include naturally leavened bread, seeing it as a logical progression.

The upcoming expansion, marked by a new doorway connecting the adjacent spaces, signifies a significant milestone for the small shop, representing the realization of its original vision. To complement the changes, the pair invested in a brand-new PizzaMaster MPM oven. This means that in addition to their signature Sicilian slices, they will also introduce a full sandwich menu, traditional round pizza, and a weekly rotating selection of pizzas and sandwiches.

While striving to remain open during the expansion, the Spinales have assured patrons that they will provide updates via social media if temporary closure becomes necessary. They aim for a soft launch in March 2024, with a grand reopening slated for late April.
